Mashed butter beans
Butter beans are a tasty source of dietary fiber and full of protein.
Ingredients
- 2 tbsp olive oil
- 400g (1 tin) butter beans, drained and rinsed
- 2 tbsp lemon juice
- 1 tsp grated lemon peel
- 1 clove garlic, crushed
Preparation
- Heat oil in a pan.
- Add butter beans, lemon juice, lemon peel and garlic.
- Stir until heated through.
- Mash beans in pan.
- Serve with vegetables/salad.
