Haddock with citrus salsa
Another easy and delicious fish meal, flavourful and healthy.
Ingredients
- 2-3 oranges, peeled and sectioned
- 1 medium onion, chopped
- 60ml lime or lemon juice
- 2 tsp fresh parsley, chopped
- ½ red pepper, finely diced
- 2 cloves garlic, crushed
- ½ tsp grated orange peel
- 1 tsp salt
- ½ tsp pepper
- 1tsp ground coriander
- 1 tsp ground cumin
- 455g haddock fillets
Preparation
- For the salsa: In a bowl, combine the oranges, onion, lime or lemon juice, parsley, chopped red pepper, garlic, orange peel, ¼ tsp salt and ⅛ tsp pepper. Cover and chill.
- Combine coriander, cumin and remaining salt and pepper. Rub mixture over both sides of the fillets.
- Grill, covered, over medium-hot heat until fish flakes easily with a fork.
- Serve with citrus salsa.
